It’s odd Stephanie Izard doesn’t make a kimchi milk shake at her bustling Randolph Street diner, but she makes just about everything else with it. And her recipe is surprisingly spicy and funky for having been devised by a waeguk-in. It’s served with her brandade and pork belly; bacon, eggs, and Asian pancakes; burgers; pork chops; and a lily-gilding Reuben (with regular kraut too). She also sells a jarred marinade version of it if you want to put it on your apple pie, nachos, or mac ‘n’ cheese.
