Wednesday from 5:30 to 8:30 PM, Cellar Rat (1811 W. North) is uncorking three varieties of aged German Rieslings and a bubbly one of more recent vintage for a free tasting. According to the Cellar Rat oenophiles, Rieslings lose some of their characteristic sweetness in the aging process, resulting in wines “of thrilling depth, delicacy, transparency, and complexity.”
