In honor of this week’s issue (and this blog), I decided to dedicate at least three meals this week to vegetables. I generally fend for myself on Tuesdays, so I could make whatever I wanted. I didn’t want to turn on the oven or be too elaborate. Tuesday night in the market, I was seeking the path of least resistance. My vegetarian repertoire is fairly limited and skews toward Middle Eastern, so I chose a can of ful medames, fava beans.
