As we were shooting this week’s Key Ingredient chef challenge (which you can read and watch here), Abra Berens of Michigan’s Bare Knuckle Farm told us a few tales of life behind the scenes as both supplier to and employee of a couple well-known chefs. In this outtake, shot as she was in Chicago to deliver early spring crops such as pea shoots and ramps, she talks about two of the chefs previously featured, Pat Sheerin (of the Signature Room at the 95th) and Paul Virant (of Vie and, now, Perennial Virant).
