This week in Omnivorous I wrote about Bread ‘n’ Bowl Company, a small bakery in Niles that does a variety of eastern European pastries, dumplings, and soups, but specializes in a few things from the Eurasian Republic of Georgia. Here baker George Gelashvili is making two types of bread in a massive “stone age” fire-brick oven known as a toné. Owner Arkady Katz says the small cocoon-shaped shoti is for breakfast, while the LP-size puri is more of a family dinner loaf.
