Nick Kokonas, partner at Alinea, has posted a response to the feature on cooking like Grant Achatz that I did with Emily Withrow of Decider Chicago. Our documentation of our attempts to make the recipe “pheasant, shallot, cider, burning oak leaves” included a video, and in his response video, Kokonas’s sons Theo and James, ages five and nine, demonstrate just how easy the recipe should be. We could point out that they’ve got a damn good adviser helping them, but that would sound petty. So we’ll admit it: those kids schooled us. At least on this recipe.
