Crain’s has an interesting behind-the-crazy-scenes-look at restaurateur Roger Greenfield. Greenfield is best-known as the force behind Bar Louie, which has franchises shootin out like spores. (Do you know there are 27 Bar Louies nationally? With eight more planned for 2007? That’s according to their web site; the article says 10-15.) He’s also, however, facing bankruptcy with his failing Red Star Tavern chain, another unit of his Glenview-based umbrella firm Restaurants-America, which is, according to the article, “16th among the nation’s largest ‘multiconcept’ restaurant companies.”
