Bad news from Madison. Early yesterday morning the building that housed the Underground Kitchen, the restaurant from the Underground Food Collective, caught ablaze. The UFC, which I profiled back in May, is a model for how novel, sometimes unregulated food business (i.e., underground dinners, outlaw sausage making) can evolve into legitimate businesses. For now the restaurant is out of business and the 27 residents who lived above it are out of their homes while officials investigate the cause. The collective, which employs some 40 people, will continue catering and meat-making operations from its remote prep kitchen, but is accepting donations to help them get back up and running.
