Thrillist is reporting that the Bristol, an upscale barstaurant in the former Il Covo space, is opening Thursday, September 18. But according to its PR firm, the Restaurant Intelligence Agency, the opening has been pushed back because of water damage caused by this past weekend’s historic downpour. It’s now slated to open next Tuesday, September 23. 

A lot of the buzz about the place is due to the promise that under chef Chris Pandel–a veteran of New York City’s Cafe Boulud who’s been working on Rick Tramonto and Gale Gand’s suburban restaurant complex–all the butchering will be done in-house, and a host of offerings from cheese to charcuterie to ketchup will be made from scratch on the premises.
