Skepticism continues to crumble like burnt bacon. Earlier today the news broke via Twitter that chefs Michael McDonald of One Sixtyblue and Kristine Subido of WAVE jumped on board the Baconfest juggernaut and will both be competing in the VIP Pro Bacon Cookoff, and feeding the crowds at the October 24-25 celebration of cured pork belly. Now comes words that aforementioned cookoff will be hosted at the Publican by none other than “Grand Marshall” Paul Kahan.

Baconfest triumvir (and my CSA nemesis) Seth Zurer says 10 to 12 chefs will compete for the judges, and a limited number of tickets will be sold to the October 24 contest (the larger event will be held the following day at Stan Mansion).

“It’s a great fit for us,” says Zurer. “The Publican is bacon central and Kahan has been a longtime supporter of America’s favorite cured meat.”
