Continuing our series of instructive, low budget food videos, here’s some footage of Ahmet Aksoy–the subject of this week’s Restaurants story–kneading bulgur, beef, and a bunch of spices for cig kofte, or raw meatballs, a specialty of Southeastern Anatolia. Offstage that’s me and Wiviott getting all Harold McGee on each other, while Aksoy’s daughter Secil rolls her eyes.
