My story for the Asian carp package in this week’s Reader, on Supreme Lobster fishmonger Carl Galvan’s attempt to convince ten chefs to work with Asian carp, saw a lot of seasoned cooks edge away from the beast. Not Lockwood’s Phillip Foss, who was a hell of a good sport in allowing me to record his first attempt at butchering the fish. Foss’s own blog post about his epic struggle is worth a read too.
