To make it yourself:

  • Collect orange peels from any varietal in a zip-lock bag in the fridge (for example, save up all the peels from a 5-lb bag of navels)
  • Roughly chop up the peels in the food processor or with a knife
  • Combine with half their weight in granulated sugar
  • Heat the peel and sugar mixture over medium heat, stirring occasionally, until sugar dissolves and the peels become fragrant and bright orange
  • Allow mixture to cool, then transfer to a jar and keep in the fridge. Use in any recipes, particularly in baked goods!
